Sweet Potato Quiche - an inspired post...

A Few days ago, my favorite Hotass posted a link to a video recipe. A recipe that was for quiche, but used very thinly sliced sweet potato slices layered to make the crust. One kitchen gadget that I have that I don't use as much as I should is my mandoline. The Aussie got it for me for my birthday several years back, and it makes the best thin sliced anything. Including fingers, but that's another story. Speaking of stories, this post is actually inspired by a person called North, who loves healthy eating. ;)

I pretty much always have sweet potatoes on hand, so I decided that this would be a great recipe to make for lunch. To make this, you'll need the following:

1 large sweet potato, peeled and very thinly sliced
1 medium onion, thinly sliced
1 bag of baby greens (kale, spinach, etc)
2 ounces shredded cheese (I used an alpine style that I had on hand)
4 eggs
1/2 cup milk
spices: salt, pepper, garlic powder, nutmeg, cayenne
cooking spray
olive oil


Thinly slice a large sweet potato. Spray your pie pan with quick release spray, and layer the slices on the bottom and sides of the pan. Cut slices in half to form the side layer. Bake for 20 minutes at 350 degrees.


While the crust bakes, drizzle some olive oil in to a hot pan. Toss in a thinly sliced onion (I had half of a very large onion in the refrigerator). Cook over medium high heat for about 5 minutes until the onion softens. Next, add in several handfuls of greens. The video used half of a bag of baby spinach. I am not a fan of spinach these days (it makes a squeaky feeling on my teeth when I eat it) so I used a package of baby kale. In hindsight, I would chop the baby kale in to small pieces to make cutting the pie easier. Cook for 5-10 minutes, until the greens are wilted. Season with salt, pepper, garlic powder, and a pinch of nutmeg.


In a bowl, whisk together 4 eggs and half a cup of milk. Add in 1/2 t of salt, several grinds of black pepper (I love black pepper, so I used a lot of it), and a pinch of cayenne pepper.


Layer the greens and onions in the pie shell, distributing fairly evenly.
 

Top the greens with 2 ounces of shredded cheese.


 Pour the egg mixture over the greens and cheese. Bake for 35 minutes at 375 degrees.


Slice and enjoy!

Soba with Green Onions And Edamame

I am a cookbook hoarder. I admit it. *shuffles feet* Recently I posted a picture on FB of a whole stack of cookbooks that needed homes. A number of them are already with their new people. So what do I do? Go out and buy two more. In all fairness, I am trying to eat more vegetables (me, mind you, The Aussie wouldn't touch this stuff), and they are vegetarian cookbooks. They're also gorgeous!



Costco is a dangerous place for me when they have lovely cookbooks on display. I should blame them for my cookbook habit since I get so many of them there.

I've spent several evenings, before it gets too dark and before the bugs come out, browsing through these books. The pictures alone make me want to make these recipes. I joked that they make me want to cook eggplant, and I really don't like eggplant.  One picture that I thought looked so gorgeous was this one. I know the lighting wasn't great, but trust me, it is a beautiful picture.


The picture goes with the recipe for rice noodles with green onions and edamame. Strangely enough, considering I didn't care for edamame the first time I ever had them (mushy, like lima beans), I had a bag of edamame in the freezer. In fact, I had a lot of the ingredients from this recipe, so I made it during lunch today. Since I am absolutely INCAPABLE of actually following a recipe, mine looks nothing like this. In fact, I made a whole bunch of substitutions because I used what I had. It was delicious.

Soba Noodles With Green Onions, Edamame and Green Beans (inspired by Yotam Ottolenghi's recipe from Plenty More)

1 bundle of soba noodles
2 tsp oil
1 bunch green onions cut in to bite sized pieces
1/2 half Hatch chili pepper, diced (I had it, never had them before, didn't know if it was hot...)
2 "peppadew-style" peppers, diced (addictive little things, aren't they?)
1 cup edamame
1/2 cup cut green beans
1 tsp garlic paste *
1 tsp ginger paste *
2+ Tbsp cilantro paste *
1 tsp sesame oil
1 small drizzle of chili oil
2 Tbsp ponzu sauce
2 Tbsp rice vinegar
1 tsp True Lime powder

* I adore the squeeze tubes from Gourmet Garden. I don't care what food snobs say, these are great.

Bring water to a boil in a medium sized sauce pan and cook the soba noodles for 5 minutes, or as directed on the package.

In a saute pan, over medium high heat, drizzle the oil in to the pan.  When it is hot, toss in the onions, edamame and green beans cook for a minute. (I used this time to dice the peppers) Stir in the chilies, garlic paste, ginger paste and the big squeeze of cilantro paste. (The original recipe calls for 1 cup of chopped cilantro. My little AeroGarden doesn't grow that much so I used my trusty squeeze tubes.) Stir to combine. You can either mix the "sauce" ingredients in a small bowl or just add them directly to the pan, like I did.

Drain the soba noodles and rinse quickly with cold water. Add them to the pan of vegetables to coat them in the sauce. Serve and enjoy!

Baby Steps

I've eaten a lot of race fees this past year. I didn't want to, but sometimes your body says no. Emphatically. Not even taking account how hot it gets in Texas during the summer, there are days where even taking dogs for walks is too much. My hamstring issue is better. Not gone, but better. The lack of energy is still there, and going strong. One side effect of peri-menopause that I never expected was zero energy because you can become anemic. When I remember to, I take iron supplements, but I'm terrible at remembering to take any sorts of pills. So, anything I do has to be in baby steps.


Which leads me to my new "training plan." I was so totally psyched when my Fitbloggin Bella teammate finished her half-Ironman the other week. Way to go Stephanie!! I was swimming back and forth the other evening in the pool when I got an idea. I'll do my own half-Ironman. It will take weeks to complete, but with baby steps, I believe I can do this.  My pool is small, just 23 feet long, including the half round step areas. I calculated (based on how I swim in the pool) that I will have to swim 158.4 laps to equal 1.2 miles for the swim portion of my half-Ironman. (I'll round up). I swam 40 laps (down and back equals 1 lap) on Monday evening. I'm looking forward to finishing the swim portion!  For the bike and run/walk portions, I'll do laps around my neighborhood. The three block loop section that I live on in my development is roughly 1 mile (1.1 on the outside sidewalk). This will be easy to track. I see people out running in the afternoon. To me, that's nuts. It's 100 degrees out. Not my idea of fun, so I'll be getting my ass out of bed earlier and take the dogs for walks while I log my miles.


Not glamorous, no cheering crowds, but baby steps on my way back to moving.

A Ninja, A Sweet Potato and A Waffle Iron Walked In To A Kitchen ...

Welcome to Trash The Kitchen Tuesday! Actually, I trash the kitchen most days, if I'm cooking. I like to cook. Cleaning up, not so much. And may I say, having a microwave oven that also works as an Advantium speed oven lets me trash the kitchen so much quicker!

Yesterday, for my #30DaysOfThankful I posted a picture of my kitchen. After reading Carla's post, Meet My Friend Melvin, I realized that I let way too much food spoil. Not everyone can, after paying their rent, their bills, their child support, etc, afford to feed themselves. This morning, pondering what to have for breakfast, I decide to use up some things that I had in the pantry and the fridge: two partial onions (one red, one white), half a poblano pepper that was on its last legs, two sweet potatoes that were growing alien tentacles, err, sprouting, and one regular baking potato. The first thing that came to mind was trying to make waffle iron hash brown/latkes, but I didn't want to do a lot of shredding. So, I washed off all of the sweet potatoes and threw them in the Advantium to bake. In the meantime, I chopped up the onions and minced the poblano. When I got the potatoes out, they were only partially cooked, so I scooped out what was soft and put the rest back in to cook more. I took the cooked potato and put it in to my new Ninja. Ninjas rock, by the way. I added most of the onion and half of the poblano, along with a splash of milk. I blended that until it was fairly smooth, then I cracked in two eggs and blended again until it was smooth, like a batter. (Oh, yes, that is savory jerky from Rachel Ray, another awesome Fitbloggin sponsor, in the background. I picked it up yesterday at the grocery store. The dogs love it.)

By this time, the rest of the potatoes were cooked well enough, so I scooped them out and put them in to a bowl, along with the rest of the chopped onion and poblano pepper. Using a fork, I mashed the mixture until there were only small lumps.

 In went the Ninja batter, along with a pinch of salt, and I mixed everything together.

Next, I added a cup of Bob's Red Mill GF Flour Mixture (feel free to use regular flour), half a cup at a time, mixing to incorporate the flour and leave no lumps. I looked at it and thought, this would be really  nice with a side of bacon. I don't have bacon. :(  Oh, wait. YES, I HAVE BACON!! Thank you, Costco. I had a bag of bacon crumbles in the freezer. Forget having bacon on the side. I'm having bacon IN my sweet potato waffles.

I let the batter rest while the waffle iron heated up. My finger can attest that it heats up very quickly, thank you very much. I drizzle a little olive oil on the waffle iron and spoon in the batter, spreading it out fairly evenly. Pressing down, I anxiously await the light to go from red to green. Yay! It worked!


Breakfast dilemma solved, and I didn't let foods go to waste. Savory sweet potato waffles, topped with a little butter. To make it even more sweet/savory, after I took this picture, I spread a little bit of my maple butter from Raymond Sugarhouse in Hartland, VT.  If you love all things maple, and like to support small businesses, please consider ordering from them. Messy Meatballs



The other day, I saw a picture of some breakfast meatballs on the ever changing Book Of Face. I frequently eat leftovers for breakfast, so the idea of breakfast meatballs appealed to me. If you think about it, meatballs have the potential to be the perfect eat at your desk finger food. Since I already had breakfast, I set about to make these lunch meatballs. During my lunch hour, too. Perfect. The original recipe called for shredding and then re-shredding the sweet potato in your food processor, followed by the onion, followed by the mushrooms... Ain't nobody got time for that. I'd be starving until next week. I remembered what the demo guy at Costco said about using a Vitamix to finely chop veggies (You add a lot of water, blend them, then drain), so I tried it. It worked really well. To a point. I really should have drained the veggies longer. The mixture was really moist (I hate that word) so I added in two whisked eggs as binder. Hmm. Still to wet. What absorbs liquids. Ding ding ding. Chia seeds. So I have extra goodness in the form of chia. And they tasted really good, too. Win-win-win.

Messy Yummy Meatballs

1 sweet potato, finely grated
1/2 cup chopped onion
1 cup mushrooms, finely chopped
2 cups baby spinach, blended
3 Italian sausage links (mine were mild), removed from casings
1/2 pound lean ground pork
6 slices of bacon, cooked very crisp, crumbled
2 eggs, whisked
1/4 cup of chia seeds
1 T garlic powder
1 T Worcestershire Sauce

Preheat the oven to 375.

Cook the bacon strips until they're super crisp. Crumble and set aside.

Next, shred-chop-blend the peeled sweet potato, onion, mushrooms and spinach. I blend-chopped and drained the peeled sweet potato, the onion, the mushrooms and the spinach, then combined them in a large bowl.


Next, add in the sausage and the ground pork, mixing well. Whisk the eggs and work in to the sausage and veggie mixture. Mix in the chia seeds, garlic powder, Worcestershire sauce and the bacon crumbles.  

Form in to 1 1/2 inch meatballs and place on a foil covered baking sheet. You may like to spray with non-stick cooking spray to make removal easier.  Bake the little yummies for 30 minutes. 


I didn't bake up the entire mixture, but I plugged the recipe in to my My Fitness Pal account so that I could track lunch. Estimating that the entire batch would make 8 servings, the per-serving nutrition comes out to 261 calories, 12 grams of carbohydrates, 18 grams of fat, 16 grams of protein, 390 grams of sodium, and 4 grams of fiber.

Why I Write

Day 1. Axis of Ineptitude Challenge.  Hmm. Why I write. I started this blog back in 2009 to earn points in a contest put together by the Fab Fatties. I had no clue about blogging, other than reading other peoples blogs. To tell the truth, I still don't have much of a clue, which is why I have unread books on how to set up your blog. No fancy tabs, no fancy buttons. Blogger changed settings on me a year ago, and I still can't figure out how to fix it. Conferences seem to focus only on WordPress. I have a WordPress site that I've posted on maybe twice. WP scares me. I really don't have a clue how to use it. But hey, I have a book or two. Unopened. I also have a secret blog, a ranch related blog, and a fun blog some friends and I have together. 

Why. Why do I write. Sometimes it's because I need to rant. Case in point, when I was still a member of the Watchers of Weight group, I got really pissed off at how they push desserts. Come off it people. You didn't get fat from celery sticks and low fat cheese. Using low fat versions of ingredients doesn't counteract the fact that the recipes were full of sugar. And who eats a one inch square of a dessert? Not me. I'll snarf down half a pan in one sitting. Which is precisely WHY I don't make sweets very often. If I'm hungry, and in "feed me bitch from hell" mode, you'd better not be between me and a pan of brownies.

Other times I need to talk about something that happened. Sometimes, it's something that inspired me. Lately, it's more likely to be something that knocked the wind out of my sails, like realizing the amount of weight I need to lose is the equivalent to the big-ass bag of pool salt I hauled out back the other day. For the most part, I keep it superficial. I admire bloggers who can really let it all hang out. I'm not one of them. Maybe it's because I'm an astrological screw up (Sun in Gemini, Moon and Rising Sign in Scorpio), but the thoughts and feelings than swirl around in the murky depths of my mind will stay right where they are, thank you very much.

Then there are the fun reasons I write. I like to cook, take pictures of my food, bore you with recipes. I don't consider myself the healthiest eater, but I'm trying to get better. Some days, I'd say I love to cook, but having to clean up the damned mess I make in the kitchen day in and day out really dampens my affection for cooking. If anyone wants to come clean up after me, I will be happy to say I love cooking again. I like to eat and drink lots of wine, too, which is why I also need to exercise.

Yeahhh, exercise...I like it, I hate it, I need to do it... meh. Maybe I'll start writing about exercise again...or start to. God knows I need to be accountable, considering I've registered for a marathon. That sentence both excites and scares me. Yay, lets go run lots and lots of miles and run a marathon before I turn 50. Which, if you didn't know, will be in the middle of next year. When the hell did I get this old?

Bottom line, I think I write to inspire myself. Face it, very few people even read my blog, so I doubt I'm inspiring them with my pearls of wisdom. Might as well be a smart ass and entertain myself! Oh, and since it's the first of the month: Rabbit, Rabbit, Rabbit. :)

Fortune Cookie Friday


To quote an old Disney song, a dream is a wish the heart makes. Several years back, it was my dream to complete a 5k before I turned 45. This might not sound like much to many people, but I didn't start running until I was 44. It was so hard in the beginning that I would make deals with myself that I could take a walk break when I reached the next mailbox, the next driveway, the next light pole... Eventually, I made it all the way to the stop sign. I was so thrilled the first time I ran a full block.

I took a couple of years off. Some of the time was forced time off because of injury, some of the time was me being a lazy lump. The lump has had her way too long. My waist and my ass have suffered because of it, too. Slowly, slowly, I have been rekindling my love of running, and my love of races. I tell you, signing up for races is a sickness!

So yes, this fortune cookie is telling the truth. My truth. Through greater effort and hard work a precious dream WILL come true. This dream is to complete a marathon before I turn 50.  The marathon in question, because I am envisioning that I *will* get registered for it, is the 2015 Disney World Marathon. I'm giddy just thinking about it. :)

On race results and being a slow runner

I am a slow runner. There. I said it. Sometimes I can walk faster than I can run. I read an article this morning that said "There is no difference between the runner who breaks 30 minutes for the 5K for the first time and the one that breaks 16 minutes." My comment to that was that I would be happy to break 35:00 for a 5k. Another comment was that if you finish last there are more people to cheer for you. Maybe if it's a big race, but if it's a small race, I've experienced seeing people driving home while I have had to wait for car traffic to pass, not the other way around. That particular race was one of the worst I'd ever experienced. Now that I'm actually running (I use that term loosely) again, this conversation and article got me thinking about my race times. I dug up the index card I started writing out race results on, looked up a couple of more recent ones (though I was unable to find my results for the 2013 Bold In The Cold 5k) and added them to my card.I actually have broken a 35:00 5k. Once. Go me.

It's very slow going, getting back to running after taking so much time off. Some races are slow because it's so stinking hot out during the summer in Texas, and the goal is simply to finish. Other races are slow because I'm run/walking intervals. So, yeah, I'm slow, but I'm still running.

Fortune Cookie Friday

One of my food "addictions" is take-out Chinese food. Before The Aussie and I moved down from the NYC area, I told friends that I was going to miss our local Chinese food place. "Oh, but there's such good barbeque in Texas." Yeah, like that's a good comparison. (I rarely eat barbeque) For the first few years, the only Chinese restaurants we found were buffet style, with not many menu options. Occasionally we would stumble upon a halfway decent Chinese restaurant, but nothing very close. Fast forward to about a year and a half ago, and viola! A take-out Chinese restaurant opens up about a mile away from us. Yay for me! As much as I like cooking, some nights I really don't want to or have the time to. And to let you in on a little secret of mine, I collect fortune cookie fortunes.

This is a vase that's almost half full of fortunes. I tell you, I've been saving them for a looonnng time. I was throwing crap out cleaning up in my office the other day and I came across some fortunes that I brought with me from my last office in NYC. Wow. They've been hanging out, collecting dust, not socializing with the other fortunes. So I popped them in the the vase with the others. Then I realized, why don't I make the fortunes earn their keep? So, I decided that Fridays will now be "Fortune Cookie Friday." I will pull a fortune out at random and write a blog post about it.

True friends. These may be friends that you've known for years and years. They may be people you haven't met in person yet.  They may be friends that you've gotten to know online through the Fitbloggin FB group. True friends will have lend you a shoulder to lean on when you're going through difficult times. True friends will have your back when you are struggling to get back on track, but won't hesitate to give you a kick in the ass when you need it. True friends will yell your name across a crowded room before they rush over to give you a hug. True friends are people who "get you." They're your Tribe. True friends can be you, too. So give yourself a hug and go be awesome. 'Cause there's no off switch on Awesome.

And now, back to your regularly scheduled program

I have to confess, this week has been a little light on workouts. More functional fitness than scheduled fitness. The elliptical and I have an appointment this afternoon, so I'll at least have that on the books before tomorrow's long run with The Moms.

This week we'll be running for 75 minutes, continuing with our 2:1 intervals. I swear, that 1 minute goes by really quickly. I'm still super slow, but forward is a pace, and the miles all count towards the virtual races I'm doing. So far, I've completed the Firefly 14k and the Firefly 14 miler. Now I'm doing the Sherlock 22 mile race. I like virtual races because you do them at your pace. Even dog walks count if you track the mileage. The cause for these races is great, too. It's to raise funds to rescue and rehabilitate Galgos (Spanish Greyhounds), and to raise awareness of their plight. Hopefully I will meet some of them in real life one day. :)

Auld Lang Syne

'Tis the season to reflect on the year that is coming to its close. For the last couple of years, the reflecting hasn't been easy or comfortable. I never really got back on track with my working out and tracking my eating in 2013 after going off the rails in late 2012, after we lost my mother-in-law. I'm still somewhat active, with walking dogs and doing stuff at our ranch, but it isn't goal driven activity.  I feel like I was a different person that year, and truthfully, I kind of miss her.  So, to borrow the words of the great poet Robert Burns, she's an old acquaintance who shouldn't have been forgotten.

A friend recently posted about the pendulum swing of the Gemini psyche. It made me think about how my own pendulum has swung too far away from "health" mode and I've gotten off balance. I'm not happy about it, either. Emotional eating doesn't make the stress go away, it just adds something else to make me unhappy and stressed out about.

It's time to dust off my running shoes, charge up my Garmin, and take back control of my whirlwind life. Extra motivation comes from the fact that I registered for a half marathon in April, so I don't want to waste the money by not training. I've also contributed to a yoga Kickstarter program that debuts this spring. I've meant, time and time again, to start practicing yoga, so this will also be motivation. Hopefully nagging from another friend will help, too. Another area I need to focus on is healthy eating, cutting back on the grains and junk foods that I know aren't healthy for me. I used to eat so much better, but I really have let things slide this year. And no more GF goodies, either. Just because it's gluten free doesn't mean I should be eating it.

Dallas Marathon (relay), here I come

It's been a while since I've run any great distance. Great being more than two miles. Time to lace up and start training again. A friend is putting together a relay team for the Dallas Marathon, pka White Rock Marathon, and I've said I'll take the second leg. Since she's never done a big race before, I said she should take the final leg so that she has the finish line experience. I chose the second leg because it winds through the Turtle Creek area. If you aren't familiar with Dallas, that's were a bunch of the rich folks live. I may as well have gorgeous houses, whose property taxes are probably more than The Aussie and I make in a year or two, to drool over while I'm running.

Bang Bang Sauce. What else would be so appropriate for the Fourth Of July.

I have to admit, I have never been to Bonefish Grill and had never heard of "Bang Bang Shrimp" until Martinus, who I met at Fitbloggin 12, posted a picture of it on Facebook the other day. It. Looked. Delicious. The more I researched it the more I understood that it practically has a cult following. Fried shrimp, crunchy greens, spicy sweet sauce. What's not to love. I do love fried shrimp, but I knew I had been making less than stellar wine um, food choices this week, so I wasn't looking to duplicate their recipe exactly. I had a big bag of defrosted shrimp in my fridge that I was planning on cooking up on The 4th, so I decided to make a leaner grilled version of Bang Bang Shrimp. Delicious, if I do say so myself. Thank you, Martinus, for the idea.


 

Bang Bang Grilled Shrimp

1 lb large shrimp/prawns, cleaned and shelled
1 T garlic powder
1/2 t freshly ground black pepper
1 t olive oil

Combine the above ingredients in a bowl and let marinate until you're ready to put the prawns on skewers.

Bang Bang Sauce

1/4 cup low fat mayonnaise
1/4 cup fat free mayonnaise
~ 1/4 Mae Ploy (sweet chili sauce)
1-2 T Sriracha sauce (to taste - this stuff is hot!)
1 t rice wine vinegar

Mix all together until smooth. Keep refrigerated until ready to serve.

If you're grilling, thread the shrimp on skewers and grill over medium heat for about 3 minutes per side, or until they're opaque. You can definitely broil in the oven or cook the shrimp on the stove. I have leftover shrimp in the fridge that I'm planning on cooking up for lunch and having over salad greens with more sauce drizzled on top. The sauce was delicious on my grilled steak, too.

Today, it's not about the bling... #PrayForBoston

What happened yesterday in Boston was so horrific. All afternoon, Twitter and FB were buzzing, as so many of us tried to find out if our friends who were running Boston were ok. Thankfully, none of the runners/family members that I know were physically injured, but it was so close for some of them, it's scary. It sickens and saddens me that someone could do something so awful, but as someone who worked in New York City for many, many years, I know there are evil people out there. 



Today, it's not about the bling. Today, it's not about pace. Today, it's not about PRs. Today, it's about unity. Today, it's about solidarity. Today, it's about community.  My prayers go out to all who were affected by the tragic attack in Boston.

Am I inspired? Ask me after my workout today...

This is kind of a catch 22 for me. Am I inspired to work out? Not always, no. Do I feel better if I do? Usually, I do. These days, though, it's taking several days for the muscle soreness I feel after working out with my trainer to go away. I had every intention of going to a yoga class at my gym last night, since The Aussie and I were planning on celebrating Valentine's Day tonight, anyway. I didn't go. I was still too sore from the core workout I did on Wednesday afternoon. Heck, I'm still sore today, and I have to go back and train with him again this afternoon.  I don't feel super guilty for not going to yoga, because I did start up C25K again yesterday morning, so I got a workout in. But I did want to go to the class.  How do you deal with delayed onset muscle soreness? Do you push through it and end up even more sore or do you rest another day or two?

Spark: the journey

I don't like getting my picture taken. Some people photograph well. I am not one of them. The fact that, at one point, I was about 75 pounds overweight, was a factor, that's for sure. The fact that I'm actually posting pictures is nothing short of crazy for me. You'd better believe I edited pictures. A few of my friends in my Spark group posted pictures today of their journeys. Not before and after pictures, really, because as Susan said recently (I'm paraphrasing, please forgive me), "after ends in the grave." There is no after, because this will always be something I have to work at. The last two weeks have been frustrating. Between having and endoscopy last week and having the flu this week, I have been on the sidelines. Figures. So, to inspire me, I'm going to look at how far I've come, not how far I have left to go. Although, I think I do look cute in my Grand Canyon pictures.


 The blue shirt pictures were taken in 2007, late summer, when my mother in law was visiting from Australia. I think I've given away the v neck t-shirt, but I still have the button up blouse. Two things amaze me: first is how much that fit like a sausage casing in 2007, and second, how big it seemed this summer. I did wear it once, to church, but I actually tucked the blouse in to my black skirt. I don't know if this was me at my heaviest. Probably not. I don't look happy, and I certainly don't look comfortable.
 These pictures were taken in October of 1999. The Aussie and I took a much needed vacation and drove around the Southwest for two weeks. I'm in my mid-30s here, so the weight has started to creep on, but not enough to get me to do much about it. Oh, I'd join a gym every year or so, work out for a bit, maybe take classes for a bit. I wish I could write a letter to who I was then, or time travel like the nasty Senator in Time Cop did. He told his younger self to lay off the candy bars or twinkies. Something like that. I look at me here and I see what I aspire to get back to. I can do it. *knock on wood*



And this. This is me these days. Naively signing up for a DietBet, taking my picture in front of the mirror with their "word of the day." Life has a way of throwing plans aside. I won't be winning that bet, so I can kiss my $20 good bye. Oh well. I'm a work in progress. I'm certainly healthier than I was in 2007. The progress may take a bit longer than I'd like, but it is what it is. Besides, they moved the finish line for "after." It's no longer when I get to my goal. The finish line is a lot more permanent than that. So I'll just keep in mind, while I plod along my path: Forward is a pace.

Yesterday was the celebration of Epiphany at church. The sermon got me thinking about the other meaning of the word epiphany and what the Pastor called "Ah-ha moments." Granted, he's talking about spiritual ah-ha moments, but I started thinking about other types.

I can gripe all I want about not making any progress, but until I actually make myself accountable for what I am doing to myself, nothing is going to change. Part of the new Weight Watchers program, Weight Watchers 360, is about implementing small steps so that they become routines. I have to admit to myself that I have really been lax with tracking. The two weeks in Australia became two more weeks at home without attending meetings. Tracking went out the proverbial door for the month of November. It's been difficult getting my head back in the game, but I have to stop fooling myself. If I keep crap in the house, I'm going to eat it. When we were out on Saturday, I bought myself a Subway combo meal. The sandwich was fine, I had water, but I also selected a small bag of Cheetos. Before opening the bag, I did look up the points. 9 points for a little bag. So, I said, not worth it. But I kept it in my pocketbook anyway. Funny how that little bag opened itself and hopped in to a bowl last night. Granted, I didn't eat all of it, but I made the stupid choice to open it up and start eating Cheetos. Stupid, stupid, stupid. So an ah-ha moment is that I can't have this in the house if I want to succeed at getting healthier and losing weight. Another moment is that I have to stop fooling myself on how much I'm eating and drinking and I need to accurately track and measure what I'm eating. The program won't work if I don't actually follow it. So here's to a fresh start in a new year, new month, new week. Today's a new day. What happened yesterday doesn't need to affect what happens today.

Spark

Wow, I really dropped off the face of the earth. Well, not exactly, but I sure haven't been blogging much these last few months. Life happens. I can't say that I'm happy to see 2012 in my rearview mirror. I had some good times, for sure (hi Jen and Heather!!!), but I also had some really sucky times. Australia: it's a nice place to visit. The flight is hell. Add the reason we went, and it's doubly so.


So, here I am in 2013. The Aussie and I survived the end of the Mayan calendar, Texas White Christmas snowmageddon / icemageddon, had a great visit from my sister, and had a quiet New Year's Eve with The Aussie and our gang. That's over now, and it's time to regroup, get my head out of my *ss back in the game, and start treating myself better.

Mentally, I have been struggling to get my act together. I'm not the only one. My dear friend Shannon has put out the call and is rallying the troops! We all need to find our spark. I've been reading "It Starts With Food" and "Practical Paleo." I'm not sure I'm looking to go so extreme as to give up my milk in my coffee, but I do need to feed myself more  nutritious food and cut back on the processed "food" that I gravitate towards. I seldom have fast food or soda, so they aren't big concerns of mine. I do, however, like my chocolate and wine. And Chinese food. And cheese... Darn you, TJ's for those lovely little mini brie bites. 

Unfortunately, I've found that the older I get, the harder it is to get weight off.  It isn't just how I deal with food that needs a spark. I finally set up my Active Link and am getting a better picture of how much I am and am not moving. I haven't been doing too badly, but I need to do more. I signed up to run Bold In The Cold 5k in a couple of weeks. My cousin and I have done this the last two years, so it will be good to keep the tradition going. It won't be pretty. He hasn't run all year, I haven't since the summer, and we both have put on some weight. I don't care. I'm doing it anyway, won't even wear my Garmin, and all I have to do is finish.

Healthwise, I finally got myself to a doctor to discuss my owngoing health issues. I'm not looking forward to it, but I have an endoscopy scheduled. Hopefully some light will be shed as to why I continue to have a problem keeping certain foods down.

I also signed up to do Roni's diet bet challenge. I had never heard of this site, but thought "why not?" 4% in a month is a reasonable goal. I can't believe how much activity this challenge is generating!

My Fitbloggin Memories




So, how do you process something like Fitbloggin? I wasn't sure what to expect, but I was looking forward to meeting a lot of twitter and facebook friends that I’ve made over the last few years.  I was also scared to the point of panic attacks, wondering if I should bother going. I am so not an extrovert. But, as the saying goes, nothing can happen if you don’t show up.

I shouldn't have worried. Hug #1: @FoodieMcBody As soon as I saw her, I squealed and ran to meet her. That first hug was so wonderful. Her warmth is contagious.

While I was standing in the hotel lobby, waiting for my turn to check in, I saw a familiar face walk in to the lobby, lugging her bags. Leave it to me to make a brilliant observation out loud and solidify my dork status, but I walked over to her and said “It’s Dubyawife!” Luckily she laughed. Hug #2 complete.

Up in the room, I decided to check twitter and see what was going on. OMG,  @Tidbits_Of_Tara posted a picture of herself in front of the Fitbloggin banner. Tara and Meegan were here!!!  I rushed down to the check in area and stalked tracked them down. It was so amazing to finally meet these two wonderful people in person. I squealed like a little girl when I hugged them. Hugging Tara and Meegan: Pure awesomesauce. Bit by bit, and hug by hug, I began to relax and feel less freaked out  more comfortable.  Sure, I was still having a lot of dorky, wallflower moments, but I was dealing with it.  Hugs from @FatgirlVsWorld: just as amazing as I'd heard they were. And, man, she should charge for her shoulder rubs.

I absolutely enjoyed meeting so many of my very early twitter friends, many of whom have transitioned in to Facebook friends. The best way to describe meeting the friends I’ve made online came up in a conversation with @KCLAnderson. She said it’s like “Oh, of course, it’s you.” She was so right. After a little while, you don't even think that you haven't actually met some of your friends in person before.When @Mizfitonline showed up: huge hugs and "Texas is in the house." So much laughter. More awesomesauce: meeting @SteveGrayFTW in person! Just as warm, fun, with as warped a senses of humor in person as he has online. (Cat, I'm a kitty cat...) And even though we didn't get a chance to have a wigs and wine party, I dearly loved meeting @MrsFatass and being able to Zumba (it's pronounced "zoomba") with her, @simplifyingsam (these girls got moves!) and 100 or so of our closest friends on her birthday.  Meeting my roomies @ItsMeVsMe and @ChristieO who I've stalked known through the Sisterhood, and @sweatismysanity was great. Very cool ladies that I am so thankful invited me to be a roommate.  I've learned that you can't cry and do jumping jacks at the same time, thanks to Thea. And she's right, she does kinda kick ass! Hanging out with @TJsTestKitchen, @JackSht, @SushiJammies, @IrishEyes1982, @bitchcakesny and so, so many others was beyond amazing.

I think Friday was the best day at Fitbloggin. You see, that's the day my girl @mendingjen arrived. I was hanging out, waiting for the lean beef session to start, when I hear “Kirsten!!!!” (my real name) I see Jen making her way through the tables and we gave each other the most amazing hugs. My heart was so full. She is one of my early twitter friends, and all of my stress leading up to Fitbloggin was worth it, just because I got to meet her and hug her in person. (I'm sorry I stood her up on Saturday night when it was time for her to leave. I think I did it subconsciously, because I didn't want her to leave, and I knew I'd be really ugly-crying.) Friday afternoon, Jen, Heather, and I decided to go for a walk. The weather was gorgeous, and we really needed to get outside. I don't have a lot of girlfriends in real life, so being able to just hang out, walk, have heartfelt talks with these two wonderful women, was so special. And, I can now say I've had a water ice. Pronounced "wah duh."

The memories I take away from Fitbloggin are more than just meeting wonderful people, taking part in some fantastic workouts, or just hanging  out. I take away the realization that no matter where you are on your journey or what your back story is, we are all the same. As @Mizfitonline recently blogged, at our very core, we are all the same.

You see, we are a cobbled together family. We have each others' backs. We're here for each other. So think about this when you see comments posted by unhappy people looking for attention (I won't link to the blog because I don't want to drive traffic to it). Do what you can to lift someone up, don't put them down. A heartfelt kind word can mean the difference when someone is having a bad day.
